Following the lead of two excellent cooks, Jess and Megan, I decided to try these ribz. The recipe did sound a little weird, but both ladies had good results, so I gave it a whirl a few days ago. All in all it was really easy to make and took almost no time. It was a bit messy. Squishing in the PB on both sides left globs of the stuff on the counter, but was kind of fun. I'm sure kids would love to help with this dish.
We had them for dinner with "cheezy" potatoes and garden salad.
I think Jim liked them better than I did. They were tasty enough, but I think maybe too much
peanut butter for me. Next time, I'll try using just 1 tablespoon and see if that makes a difference.
There was enough left over that I had lunch for two days! I stuffed the ribz into a pita with lettuce and some mayo and rolled it up. That I liked better than the ribz just on their own. But I will definitely make them again trying adjustments.

hi carrie ~ your ribs look delicous! i went & snagged the recipe - thanks! our timing is kinda funny & it's almost like you answered my question on this morning's post... you might be able to use tahini instead of peanut butter next time to get a more mild flavor. i dig your idea of making a rib pita sandwich.
ahhh....yes! Tahini! Great idea. I will try that.
i have that recipe too. i know because i remember wondering why everything was listed in Tablespoons!
anyway, that meal looks mighty comforting. made me HUNGRY!
I like the idea of having it in sandwiches...I'l have to try that!
