"Throw Together" Dish

I had some veggies in the fridge that I wanted to use up before they went bad. Hmmm, what to make?

There was still a package of brown rice pasta left over from when I was on that anti-inflammatory diet , so I pulled that out.

As I was poking around in the veggies, I spied this. I like Pete's Tofu. They are a Canadian company, which is worth supporting, and they have great products. This Szechuan one is awesomely delicious. I figured I could use that too.






I remembered that I had this sauce - President's Choice Memories of Mum's Kitchen It's a soya ginger sauce that is really yummy and works great for a stir-fry. Ah, yes. An idea was coming together.

After a bit of chopping and stir-frying, I had this.

Not bad for a meal made out of stuff hanging around, eh? It tasted incredibly good. Jim & I both ate more than we probably should have. My tummy was full!

There was no need for dessert that day. What's your best "throw together" dish?

I haven't been to the store in over a week so I've really been scraping the bottom of the refrigerator and pantry trying to come up with meal ideas! Tonight's was definitely one of them. I had a box of falafel mix. I made falafel patties with a tahini lemon sauce and served it with hummus with carrot sticks and pita bread. Can't say the boxed falafels were that great though. Decent, in a pinch. But I probably wouldn't buy them again.

Your meal looks much better than mine did!

Hey Carrie, here's the chana saag aloo recipe:

Chana Saag Aloo
Creamy Curried Chickpeas, Spinach and Potatoes

1 large potatoes, peeled and chopped into 1" cubes
1 cup cooked chickpeas
1 medium onion, minced
3 cloves garlic, minced
200 ml (a little more than 3/4 cup) coconut milk
2 cups fresh spinach, chopped into thin strips
1 cup ripe tomato, chopped
2 tbs cup nutritional yeast
1 tbsp oil
1 tbsp curry powder
0.5 tsp cayenne pepper
salt to taste


Instructions:

In a saucepan, heat oil and add garlic and onions. Cook until translucent, add potatoes and spices. Cook for about 3 minutes, then add coconut milk, nut. yeast, chick peas and chopped tomato. Simmer over medium heat for about 20 minutes, then stir in shredded spinach. Let it wilt, then serve over rice.

Makes two good-sized servings. White jasmine rice worked well with this, but I imagine lots of kinds would. This reheats well.

Nice work throwing that together! Looks very good, and looks well thought out too! Lol! Yum!

For my "in a pinch" dinners, we make spaghetti. While the spaghetti boils I make garlic red sauce, add nutritional yeast, and throw in some TVP to give it a "meat sauce" kind of texture. I toss artichoke on mine too.

i love how your meal came together, carrie & it was all on hand too. but, a "throw together meal"?? i'd call this a gourmet meal at our house! looks so great & i think we have pete's at our store...

Crystal, I have a box of falafel mix. I think it's Casbah brand. I haven't tried it yet, but now I'm not expecting too much from it. Like you said, would be good in a pinch.

Mary & Candi, we have a lot of spaghetti too. I do the TVP as well. On days when I have time to cook, I make a big batch of "meat" balls and freeze them. Otherwise, I sometimes buy ready-made. Jim's favorite meal is spaghetti, so he never complains about that being thrown together.

Alex, I have nothing against raw foods. In fact I eat a lot of them, but I could never follow a raw food diet. For one, it seems quite time consuming. Time is something I don't have a lot of - especially lately. If I had someone to make my meals, then that's a different story. But I also like a hot meal; Eepecially with winter coming up. I can't imagine coming in on a blizzardy day and not having some piping hot soup or stew.

Vicki, I've seen your food posts! If this is gourmet, then you eat gourmet most days!

I love Pete's tofu, but my small town grocery store stopped carrying it
