Spicy Vegetables with Tofu

A couple of months ago, I was in the staff lunch room reading someone's discarded copy of The Hamilton Spectator. I came upon a recipe that sounded easy and really tasty - and it was vegan! I ripped out the page and brought it home.

I finally got around to making it last week.



This came together in no time! I was really glad I pinched that piece of the newspaper because this was very, very good. I didn't have the chili pepper so I crushed up a dried chili pepper and that worked just fine. The recipe didn't call for bean sprouts, but I had some here, so I threw them in.

Yum! That looks so simple and tasty, and I have all the ingredients at home. That curry in the previous post looks to-die-for. I'm one of those people who doesn't know when to stop when cooking and I usually end up with way more ingredients than called for in the recipe by the time I'm done with it. That recipe looks like it's already done that for me. :)

Thanks for the simple, yummy looking dinner. I'm sorta in a "don't know what to cook" rut recently. I'm not ambitious enough to cook complicated things (work stress lessens in a few weeks), but I really want to cook something healthy for the fam.
